Does your college kid rave about avocado toast? Do you feel puzzled by this? Maybe you feel you should take up yoga to have to enjoy a slice! It’s the new, sexy, food that started buzzing in 2010, but unlike the trendy fat filled burger of the 1980’s this is a trend your teen should be encouraged with. Over 4.24 ….billion avocados are sold in the USA each year and most end up on toast! So where did this trendy food come from? The fruit grows in Mexico but its claim to fame is from a restaurateur in Sydney, Australia named Bill Granger, who, in 1993, put avocado toast on the menu of his restaurants named, “Bills,” but there are reports of avocado toast dating as far back as the 1920’s in San Francisco. Due to its rough skin, an avocado is often referred to as an “alligator pear.” It’s packed with some amazing health benefits. They contain more potassium than bananas, and are high in fiber, and lower cholesterol by 22%, and triglyceride levels by 20%, and increase HDL by 11%.

Avocado Toast

Start by using whole grain bread, but watch out for preservatives. Buy local baked bread and you can’t go wrong.

Cut 2 slices of bread.

Slice the avocado in half and remove the pit. Scoop out the fruit, and add a pinch of sea salt a clove of mashed garlic along with a squeeze of lime juice. Not only is this a healthy meal but also very cost effective.

Spread the avocado equally on each slice of toast and enjoy. Of course, you can also top with fresh tomatoes, and poached egg.
