Black Bean Burger

  • 1 can of organic black beans, drained and rinsed
  • 2 egg whites
  • 1/2 red onion, chopped
  • 1 cup of whole oatmeal
  • lightly cooked left firm
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon fresh garlic
  • 1 teaspoon of ground Cumin
  • 1 teaspoon of chili powder
  • 1/2 cup shredded carrot
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon extra-virgin olive

Serves 6:
Put beans in a large bowl and mash well with a fork. Add egg whites, red onion, oatmeal, carrots, oregano, cumin, basil, fresh garlic, sea salt, chili powder, pepper, and hot sauce. Mix well to combine then shape into 6 patties.

Heat oil in a large skillet over medium heat. Arrange patties in a single layer. Cook, flipping until brown on both sides until done. Cook about 10 minutes total. Served on a toasted whole wheat English muffin or desired bun of choice. Add lettuce, tomato, and onions. Served with a side of baked sweet potato fries.
