Caramel Apples

Before you heat, whisk together all the above ingredients in a large pan. You need a deep pan as the liquid will bubble up.

Bring it to a boil slowly over medium heat and keep stirring at 245ºF.

In about 8 minutes the caramel will start to thicken. Test by dropping a bit into an icy cold cup of water. If it becomes a flexible ball it is done. You are now ready to dip your washed apples into the caramel. Make sure you have wooden skewers inserted into the apples. You need dip the apples quickly as the caramel will quickly firm up. Place apples on a pan lined with parchment paper or a silicone mat. Cool for at least 15 minutes before serving.
